DOSAGE

BURMIX 500 g - Wheat flour 250 g - Eggs (4 small) 200 g - White wine 150 g - Grated lemon peel to taste

 
METHOD

Mix all the ingredients for 10 minutes on first speed. Turn back and let rest for 10-15 minutes. Pass under cylinders or under a sheeter (make 3 folds of 3 to make the pasta drier and stronger). Leave the loaves obtained to rest for at least 30 minutes (optimal 24 hours), possibly in the refrigerator. Roll out the dough and cut into rectangles as desired. Cook in oil at a temperature of about 180° C. Sprinkle with icing sugar.
